“North Bridger Bison is such a cool outfit. Matt and his family adore their animals. They respect the natural history of the species, they take pride in having the animals on their landscape, and they manage the land to provide habitat for a variety of other wildlife species.

As for the product, it’s phenomenal. Their bison meat is delicious, and it’s also a history lesson. Bison fueled the people of this continent for some fifteen thousand years. This is what it tastes like, pure and simple.”

“This bison is the perfect marriage of wild and farmed meats: Just enough fat (grass fed, golden and flavorful) to make me happy, but with a mature, deeper flavor than most any beef I've ever eaten. From brisket (yes, you can make an awesome smoked brisket with bison!) to skirt steak, heart, cheek, ribs and steaks, I am really enjoying cooking through this animal!”

“A good friend referred me to North Bridger Bison, and I couldn't be more grateful to be sourcing bison for my clients from such an amazing family-run business. Matt takes great pride in raising the healthiest animals and harvesting them in the most humane way possible. The beautiful thing about all of the extreme care he takes in raising and harvesting his bison is that the meat is the most nutritious and delicious source of protein I know of.

Thanks to Matt Skoglund and his family, I am able to truly bring the most ethical and nutrient dense protein to the table. My primary client is a highly tuned professional athlete, and he has had nothing but great things to say about how much he enjoys this bison and how great it makes him feel as well. To top it off, the customer experience is a pleasure. Getting to speak directly with the person who raises these animals is not only highly informational, but always a fun conversation as well. I look forward to cooking and serving North Bridger Bison for many years to come!”

“It all started with an e-mail intro, followed by a chat on the telephone. Moments into that first conversation, I realized a great connection had been made.

Matt and his family have cultivated a wonderful existence raising bison. The respect for their animals is apparent; resulting in meat that is beautiful in appearance, fragrance, and flavor — making for a delightful experience when both cooking and eating.

A deep thoughtfulness abounds throughout the entire process at North Bridger Bison — from start to finish.”

“I was lucky enough to meet Sarah Skoglund 3 years ago at yoga. In the intervening time, I’ve gotten the honor of not only seeing Sarah’s precious self a few times a week, but also to watch NBB start as a seedling of a dream and grown into the spectacular company it is today.

My career is in the wellness industry, so overall health is something I take seriously. I try to eat wild game exclusively, very rarely choosing to buy any meat. Sarah very kindly brought me some bison to test about a year ago and ever since then, NBB is literally the only meat I buy. The bison is phenomenal, which makes it an easy choice. But equally important is that Matt has the mission of being a steward of the land, and does his best to foster a positive impact both agriculturally and environmentally. NBB’s values as a company are something we should all strive to emulate.

Bottom line is that the meat is stupid good, arguably the best you’re going to taste; and the Skoglund family are not only phenomenal humans, but have created a stellar company that is one that deserves your attention and support.”

“Growing up on a small family farm and then enjoying food throughout the world during my life, I’ve eaten a lot of red meat, and North Bridger Bison is — by far — the best. With Matt field-harvesting, their bison are never subjected to the stress caused by being trucked to slaughter, like virtually all other meat products. The bison live a very natural life roaming with the herd, eating grass, and doing what bison do.

Because they’re not relocated for processing, the lack of stress comes through in the meat. You literally can taste the difference. I recall saying after my first bite, “This is the best meat I’ve ever had.” North Bridger Bison’s commitment to the land and the animals allows me, in my own way, to know that I’m respecting the animal, who has enjoyed the best possible life while also providing me sustenance.”

“As someone who fell in love with food in his teens, North Bridger Bison has been an incredible discovery. Matt’s bison is unlike any other. The meat is fragrant and supple and needs only be seared by the flame and joined with salt to come to perfection. The ground bison makes burgers that have hints of flowers and grass, and is also perfect for a Bolognese.

The steaks and roasts are the true stars though. You will see beautiful lines of yellow fat, proving the grass-fed, wild roaming nature of these beasts. The meat is naturally super moist and we leave it for a day or two in the fridge to drain on paper before searing on high heat.

I order a half bison each and every year, and will never stop. This stuff is prairie gold.”

“As an Integrative Nutrition Practitioner, I am extremely mindful and careful about what I feed my family. If you care about your health, your immune system, and the longevity of our planet.... North Bridger Bison is here for you 100%.

The way the bison are raised, treated and fed actually CHANGE the nutritional content of the meat! This is why the only meat (other than some pasture-raised chicken and wild-caught fish) I feed my family is North Bridger Bison. Their bison are grass-fed, healthy, and happy. This means healthier meat for us to consume.

• Much lower fat content than industrially raised meat.

• Up to 5x more anti-inflammatory Omega-3 fatty acids. Improving brain & heart health!

• More vitamin A & E than grain-fed beef/bison.

• Vitamin K2, a strong antioxidant that has been shown to improve both heart and bone health.

• One of the top food sources of zinc, which is vital for a healthy immune system.

Additionally, Matt humanely field-harvests the bison after you order it. This mean zero stress for the animal. It also means healthier, better tasting meat that isn’t flooded with the stress hormone cortisol.”

“Having Matt and Sarah’s bison in my freezer means that dinner is just minutes away—burgers, meatballs, taco meat, or sauce for pasta are just a few of the possibilities. The flavor is mild and delicious, and I’ve found that a simple, home-cooked meal is often easier than takeout. I hesitated making my first purchase because I was concerned about “too much” meat, but then I did the math: a quarter bison means one pound of ground bison every week for a little over a year and a few awesome steaks for treats.

“We bought a bison quarter from North Bridger Bison. The flavor of their meat is incredible — no need for any fancy marinades or cooking techniques. You will have yourself one of the easiest, most delicious, and healthiest meals you can prepare. We enjoyed all the cuts — the steaks are so tender and juicy, and the ground bison makes the tastiest burger I’ve ever had.”

"I was a vegetarian for over a decade — and reintroducing meat into my diet has been a slow and researched process. The meat industry didn't sit well with me for a long time . . .

I found North Bridger Bison and immediately respected their practices. They are dedicated to letting bison improve the American landscape and live a natural life, all while keeping their customers involved. They are honest, thoughtful, and communicative. I know it sounds a bit lofty, but it is important to me to take one animal at a time, acknowledge both its life and death, know that it existed in a sustainable environment, and know that none of it was considered a waste. North Bridger Bison absolutely provided that experience for me, and the bison is certainly delicious! Take the time to know your food!"

“We like to support businesses and people we believe in. Matt and Sarah are passionate about the environment and ethical and sustainable ranching. Our bison was outstanding, and their customer service could not have been better. We've invested in a chest freezer and will be NBB customers for a very long time!”

“North Bridger Bison has helped transform and solidify the learning, eating and overall experience of young people on our summer and Gap programs. Students come from all over the country to experience farm and ranch life, learn about responsible land use and conservation, carbon drawdown activities, soil regeneration and ethical food sourcing. North Bridger Bison covers all of those topics, and Matt and Sarah have helped facilitate the learning by inviting our participants to their ranch to be part of a bison field harvest and subsequent quartering and processing. Kids then learn to cook the bison into delicious burgers and steaks that they incorporate into meals for the duration of the program. Several have even taken the plunge into cooking and eating the tongue, heart and liver.

As a result of this adventure, holistic learning experience. and delicious protein source, there are dozens (soon hundreds) of young people who are all the more connected to their food, the animal, and the land that supports it. Thank you, Matt and Sarah. We are very appreciative, and we have loved the bison meat that you have so thoughtfully produced.”

“I love presenting my clients with the best locally sourced food. Bison is one of my favorite proteins to work with. North Bridger Bison does the best job ranching and harvesting that product for me to bring the most delicious food memories to the table. The North Bridger Bison Family are personable and reliable, and their bison is always delicious. I take pride in what ingredients I serve, and I can always depend on their product being the best.”

“Awesome product and story. I am thankful to have the ability to support this type of regenerative agriculture all while reaping its benefits in my home. We need ranchers like Matt and his family.”

“We ordered a quarter bison from Matt at NBB, and we appreciate the humane manner in which they harvest the bison. Their herd is healthy and well managed, which comes forward in the flavor of the meat. The entire purchase process was exceptional and very pleasant! Matt delivers it right to your home, again … exceptional!

The meat is the Best and most flavorful bison we have ever tasted! We have purchased other bison from other ranches, there is no comparison! Well Done, North Bridger Bison!”
